
This Keto Chocolate Lava Cake Recipe makes two lava cakes. If you only need one, it would be easy to cut the recipe in half. These lava cakes go great with a bit of whipped cream with a bit of low-carb sweetener and a touch of vanilla added. They would also be amazing with low-carb vanilla ice cream to balance out the rich chocolate flavor.
Keto Chocolate Lava Cake Recipe
Ingredients:
- 6 tbsp cacao powder
- 6 tbsp granulated Swerve
- 1/2 tsp gluten-free baking powder
- pinch of sea salt
- 2 large egg
- 4 tbsp heavy whipping cream or coconut milk
- 2 tsp unsweetened vanilla extract
- 56 g (2 oz) 100% dark chocolate
Preparation:
In a small bowl, whisk together all dry ingredients. Stir in the remaining wet ingredients and mix until smooth. Spray 2 microwave-safe mugs with cooking spray and pour in the mixture. Place the piece of dark chocolate in the middle of each mug and spoon with batter over it to cover.
Microwave for 1 minute just until the outside is set, it should still wiggle in the middle. If the edges aren’t set cook in 15 second intervals until set.
This recipe can be made in the oven too. Simple pour the batter into 2 oven-safe ramekin and bake it at 350 degrees for about 12 or until baked in the centre.
Let stand for 1-2 minutes before flipping onto a plate. Sprinkle with cocoa powder or stevia on top to garnish and serve with some fresh raspberries. You can use a different mould shapes like I did, to make it more interesting.
